Default What exactly is this bend test you guys speak of?!

New to smoking... just had my first cook a couple weekends ago, turned out pretty good but i have a feeling that it could have been better. I might have sauced them too early but thats what learning is for. Anyways, I've been hearing a lot about the bend test used on ribs to check for doneness and tenderness, could someone please elaborate on this subject please. Thanks in advance.

Bends 90* but doesn't tear apart - just starts to tear. I just push a bamboo skewer thru tween the Bones and when it Glides thru they are Done.

Yup....pick up a rack of ribs with a set of tongs (or gloved hands) only holding about half the rack.

If the rack bends over or stays stiff....not done yet.
If you can't pick them up because the rack falls apart....overcooked.
If the rack starts to break under it's own weight.......PERFECTION.

You bend over and touch your toes for 10 seconds and stand up quickly. If you can do it without stumbling you can have another beer.

I cannot emphasize this awesome post enough. Because people ask what the bend test is and then countless numbers post only a picture or say "when the rack bends 90 degrees...yada yada".

Here is a clear example in the first picture where that rack is way past 90, but NOT done. The bend test in terms of degree of flexing can so many times be a false indicator. Also tons of bones (all of them I think) with really good pull back in that first pic, but bone pull back can also be a false indicator.

The 2nd picture with the extremely crucial information of "If the rack starts to break under it's own weight.......PERFECTION" is awesome. That additional cracking helps so much. I actually never use the bend test and go by the cracking itself.

Kempis your description here is absolutely the most useful I have seen on this forum ever

Take a round tooth pic and test for tenderness. When the tooth pic goes in with very little resistance it's done.


Bend ribs uncooked and they'll bend almost as much as cooked. ( don't get too mad bend test people) I just think the probing method is the best indicator.
