I make homemade Latkes often but this time it was into the waffle maker for something different.

Into the pot, shredded potatoes, minced onion, flour, egg and salt and pepper. This time I also added shredded pepperjack cheese.

After about 8 minutes it was time for a peek! Looking good.

Get the bacon and sunny side up eggs ready for plating.

That's a great idea. I've been known to put just about every batter I make in the waffle iron, don't remember trying potatoes. Was there a problem with sticking? I don't see any oil or fat.

A light cooking spray was all I used and no problem with sticking.
 
Great way to do regular hashbrowns. When I am really lazy, I just throw a handfull of frozen hashbrowns on the waffler.
 
Options for the next time:

Crumble cooked bacon into the mix.

Crumble cooked sausage into the mix

Crumble cooked sausage and bacon into the mix.

The options are virtually endless.
 
Leftover brisket or pulled pork and green onions added to that......
