Default Tandoor Setting on Clothes Dryer Drum (Pron Heavy)

G'Day Bruces'

I had such a great day on Sunday with my new favourite cooker! After cleaning my shed last week, I found some meat skewers I had been given about 10 years ago.

This drum burns so hot I didn't have to think twice about trying it as a tandoor.

Firstly, I had a small leg of lamb and some chicken thigh fillets cubed up into large chunks.

I made up 3 marinades.

1. Teriyaki (made from scratch).
2. My version of tandoor yogurt style.
3. This stuff in a jar from China which is honestly one of the most amazing things to come out of a jar...

Yep. Peanuts, Chillies, Sesame Seeds, Cumin and lots of other stuff. So I marinaded some of the meat with this.

But forgot to take pics of the other 2 marinades.

Anyway, as dinner time approached, I moved production out to the shed!

And prepped some real "fire food" for the salad.

Yes... that is a Poblano pepper! New to Australia. I've been waiting for these little beauties to arrive for years and now here they are!

So, I set up a number of bowls with various ingredients so that the family could kinda create their own salad to go with this. I had also steamed up some Basmati Saffron rice, which at this time went on the griddle of the drum to crisp up on the bottom.... they key to the technique was a large knob of coconut oil in the rice for flavor and to prevent too much burning.

Anyway, I got everything done for the family first before I cooked my own because I wanted some good pics. It was however, hard getting a good pic of the meat skewers in the fire...

But this one looks OK...

And I got a lot of plated shots... I can't decide which one looks the best!

Anyway, it was an amazing dinner. The smokyness of all the food was just incredible. I'd really forgotten that cooking on direct FIRE with WOOD, really is a different thing again from slower smoking or even grilling with charcoal. Seriously it really got me inspired to do more of this! I really think my other BBQ's are in serious danger of neglect with the flavour that comes out of this thing.

Honestly fellas, if you've got a clothes dryer... It's worth it! It really is!

Oh, and that Chinese chili marinade? WOW! It was awesome. Brilliant heat and depth of flavor! It was the best of the lot!

There ya go! Great stuff right there! And all the plated shots look the best!

There's once in a while I'll grill something over an oak fire and I always get a great reaction from the fam.

Glad you're putting up cooks again!
