Homemade Pesto Pasta w/ Roadside Chicken: Pron, Tutorial & Recipe Inside!

The Missus and I are very fond of pesto, and make it frequently with penne, sundried tomatoes, asparagus, and mushrooms. This time we decided to add some freshly grilled Roadside Chicken I cooked on the drum to this dish and we really knocked it out the park. Our guests were equally impressed with this simple, yet tasty dish.

I took four chicken thighs and put them on my UDS with a temp of about 325. I basted frequently with the roadside mop sauce. After about 45 mins, here's how they came out:

While the chicken rested, we whipped up the pesto, then sauteed asparagus, mushrooms, and sundried tomatoes in EVOO.

Then we deboned the chicken, cut it up, and added it to the pesto:

Next, we added the veggies to the pesto and chicken:

Finally, we added the hot penne pasta, and mixed everything up, and added a bit of fresh parsley from the garden, and a touch of sea salt so the flavors would "pop":

When all the ingredients were thoroughly mixed, and the pasta was evenly coated with pesto, we served it, accompanied by Caesar salad with The Missus' homemade dressing and topped with freshly grated parmesan:

Not a single plate was left with so much as a morsel!
