Default Has anybody seen a tri-tip like this?

In Publix to get a steak for Sunday's dinner, when I spotted a beautiful tri-tip. Snapped it up, and when I opened the package, I found this.





The picture shows it already trimmed, but there was a 1/4" thick fat cap on the bottom, kind of like a brisket.




I weighed it and it was 6 1/2 ounces, over 20% of the total weight.


Have any of you had a fat cap on a tri-tip before? I haven't. Going to complain to Publix if this was an oversight. Tri-tip was great by the way.

It is just an untrimmed tri-tip. That's pretty normal. Usually untrimmed is a little less expensive than trimmed. I prefer the untrimmed so I can trim them myself.

I get untrimmed tri-tip at RD all the time. Last package was $3.84/lb. After trimming, the pieces averaged out to about $5.50/lb. Still a pretty good price.

OK. Been getting them at Costco and they have already been trimmed. Thanks for the feedback.

We get em' at Winco here, $2.98/lb fairly regularly. I like them untrimmed as well, that way I can trim it the way I like.

I don’t go crazy for untrimmed anymore. Last time I bought a maxpack I weighed the fat after trimming and calculated it was nearly the same price as regular trimmed tri tips on sale (here in California).

I buy the untrimmed. Wife and I like the effect it has on the end results. Course we do some light trimming but thats it. Not a cost thing, just like the fat. Same with briskets.
