Finishing Rubs
Hi,
If you put a dusting of rub on your meat just prior to turn-ins, do you use the the same rub that you used prior to smoking? Or do you attempt to use complimentary but different flavors, ala APL's building layers of flavor? How do you apply it? I'm thinking of using a sifter. Thanks, Eric

A sifter works great...try grinding up your rubs into a superfine powder that melts quickly when applied...great for a power punch at the end!

I use a different combo of rubs that fill in a flavor profile void and compliment my product. Finely ground, applied with a pinch between my fingers.
