Default I still burn meat every now and again!

Lately I have not had the time or the money to really flex on the kettle. However, enough is enough. Got an 8# butt on the kettle right now. Injected with apple juice, cider vinegar, and a splash of creole butter. First time injecting anything but yardbird so we shall see. Rubbed with Punch ya Daddy Cajun rub.

I had a craving for PP sammies with slaw so the KFC clone recipe is in the fridge too. Gee, mebbbe I could make some epic beans??? Still have time to go to the store and buy some stuff... Maybe?

It's done. KFC clone slaw came out alright, but I really needed to chop the veggies up more. A little too rustic. On the flip side this butt was my best tasting shoulder to date. Huge roasty pork flavor, light smoke, not too sweet, not overspiced from the rub. I got only one bite with the butter flavor. Now I need to do a SxS cook to see if the injection is what did it. I even froze the pan juice sans fat for a rainy day.
