Full Fledged Farker
Well, with the weather here in upstate NY being so good, my team mate and I decided that it was time to get cracking on getting ready for our first comp. We are doing a single-entry event in May, which will be ribs. Since my team mate has never cooked ribs in the low and slow style, I ran through what I did, and used a couple of rub combinations, so we could decide on the flavor profiles. This weekend, we have practice #2, and not only that, we will be practicing on the smoker I bought just for competition.... A 22.5" WSM!!
As my boss said to me yesterday as we talked about it.. now that I bought the smoker.. there is no turning back now!! We plan on doing a KCBS event next summer!!
