My daughter and me's Chicken Jerky experiment
The other day my two girls were doing their famous playing/killing eachother routine. After about 20 minutes of getting tired of telling them to stop hurting eachother, I decided that it was time for some sort of an intervention. There was chicken sitting in the fridge and I had a powerful urge to smoke something so, I called over to my oldest and asked if she would like to cook something on her smoker. A huge smile came over her face, she immediately released her sister from the head-lock she had her in, and ran into the kitchen with a "YES!". She agreed that chicken sounded good. I took out a couple of breasts and asked if we should cook them as they were or remove the skin and bones. She opted to have the skin and bones removed. I think it was mainly just because she wanted to watch me cut it up, for some reason. Once that was done I told her we were going to come up with something to soak the chicken in while we fired up her smoker.
The first thing I asked her was, what she wanted to use for the base; wine, beer, pop, or juice? "Pop!" (Yes we say the word pop in reference to coke, pepsi, or soda up in these parts.) In went a can of Pepsi Max. Seasoning salt or Kosher? "Kosher!" Basil or Oregano? "Oregano!" Throw in some thyme and garlic powder. I did the measuring and she did the pouring in of the ingredients. White or raw sugar? "White!" I had to quick sneek in some black pepper when she wasn't looking because she refuses to go anywhere near the stuff. (Maybe one day.) In the end this is the recipe we came up with. 1 Can of Pepsi Max 3 tsp Kosher Salt 3 tsp sugar 1 tsp oregano 1 tsp thyme 1 tsp garlic poweder 1 tsp black pepper She thought it was really neat how the pop reacted to the salt by fizzing up. Once the foam was calmed down, we put cling wrap over the top of the bowl and let it sit off to the side. While they were soaking, we got her mUDS fired up. After about an hour of soaking, I took the two breasts out and sliced them into 1/4" thick strips, tossed them in the soak for a couple more minutes and then onto the smoker went. I didn't put a thermometer on it but, I set the smoker vents where I figured would cause it to be around 200. The chicken then sat in the smoker for about an hour and then I turned the pieces over. At this point I wasn't sure if I was going for just smoked chicken tenders or chicken jerky so, I let them cook for about another hour and checked on them. They had turned a nice smokey golden brown at this point and I figured no matter what they were, I would take them off. They weren't buttery moist like tenders but, they had just enough moisture to be some excellent Chicken Jerky. My daughter had the first one for herself and proceeded to run over to her Grandparent's house with a plate because "They are so good dad, Grandma and Grandpa have to try them!". I have to admit, they were some darn tasty snacks. I found myself rationing the remaining pieces out over the next two days between my daughter and me. We'll definitely be making these again!
