Default Tamale Pie

Made up some Tamale Pie for dinner.

3 carrots, 1 med onion and 8 ounces of chorizo, browning in a cast iron skillet with 2 TBSP olive oil. And a pinch of kosher salt.




Chopped up 5 cloves of garlic and a chipotle, added to the party after 8-10 minutes of browning.



Added in a can of diced tomato and 2 cups of chicken stock. Reduced the liquid by half.



Added in 1 TBSP fresh chopped Oregano and 1 pound of pulled pork, that I previously cooked up.



Added corn bread and baked on the kettle at 350 for about 20 minutes.



Looked like this coming off.



Good char on the veges, pork and chorizo.

That turned out great, but the skillet is too small, there won't be any leftovers

Yup. Just dollop it on the top and try to spread it in an even layer. In hindsight I should have made up more batter so it would have covered everything but I haven't made this before. Next time I guess. It was very good.
