Fired up the Klose yesterday, and did a 12lb packer and a fatty.

Brisket dusted with Plowboys Bovine Bold.

Cubed up the point. Sorry no pix of that though.
It's dangerous getting between hungry people and food.

Also with no pix, we made 5 lbs of Chorizo and 5 lbs of Farm Sausage (the recipe Thirdeye posted)

Likes me some Bovine Bold. It's been a while since I cooked a brisket for just home consumption. Maybe next week.
