Thank you Terry. They're a little difficult to keep together while wrapping as the smoked cheddar was a harder cheese and would keep breaking. I finally got the hang of it and was rewarded for my patience. I also made some Prosciutto wrapped ones with Goat cheese (next post) and they were much easier as the Goat cheese could be formed to the shrimp and would help the jalapeno stick.
