Low/salt free rub

I know its not a recipe and probably doesn't help you now but if you are ever looking for a comercial rub, all of ours except the Santa Maria Style are very low in sodium.

Here is a good no salt rib rub:

No Salt Rib Rub for Honey Coated Ribs - There is no salt in this rub, no sugar either. All the sweet comes at the end.
Ingredients:

3 tablespoons paprika
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon ground basil
1 tablespoon black pepper
1 tablespoon red pepper
1 tablespoon mustard powder

Warmed honey

Combine all the dry ingredients and mix thoroughly, season and smoke your ribs. Brush ribs with warm honey about 10 minutes before ribs come off the pit.

I keep a jar of this on hand, and don't mix any salt into it. Even though it's called a beef rub, I really like it on chicken.

Jim Goode's BBQ Beef Rub
"This beef rub is great for beef, pork and lamb. Once you mix the spices they'll keep about 4 months in an airtight jar. When ready to use, just rub into the meat, wrap in plastic, and refrigerate the night before grilling."
Jim Goode

Original recipe yield: 3 /4 cup.

Ingredients:
2 1/2 tablespoons dark brown sugar
2 tablespoons paprika
2 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 teaspoon ground bay leaves
3/4 teaspoon ground coriander seed
3/4 teaspoon ground savory
3/4 teaspoon dried thyme
3/4 teaspoon ground black pepper
3/4 teaspoon ground white pepper
1/8 teaspoon ground cumin
salt to taste

In a small bowl, mix together the brown sugar, paprika, mustard powder, onion powder, garlic powder, basil, bay leaves, coriander, savory, thyme, black pepper, white pepper, cumin, and salt. Store in an airtight jar at room temperature until ready to use.

The Rub Comapny is low is salt/sodium. Dizzy Pig Dizzy Dust no salt is low as well. I am pretty sure Todd's Dirt is also low in sodium. I make a rub for home that bases on herbs (Todd's Dirt) along with some smoked paprika, chile powder and black pepper. It works great for things that are going to be sauce. Add some turbinado sugar and you have a good dry rub for ribs without sauce as well.

Here is the rub recipe I use most of the time on my pork butts. It is hot and spicy with lots of bite to it. I have given samples to a few friends and they swear by it on chicken wings.

Troll Dust

2 dried Ancho peppers, seeds removed
8 smoked Habanero chilies include seeds for the brave
8 Chipotle peppers, seeds optional
4 sun dried tomatoes

1 tablespoon of kosher salt (can omit with really noticing its omission)
1 teaspoon black peppercorns
1 teaspoon savory
1 teaspoon cumin

Preparation:

Place everything in blender or grinder and turn into dust. Store in an airtight container, in a cool dark place.

I've used this rub several times on spares (without the honey as it wasn't listed in the recipe section) and I really like it.

I've used this for a few years-

1/2 cup of turbinado sugar
1/4 cup of Hungarian paprika
1/4 cup of salt free chili powder
2 TBS of granulated garlic
2 TBS of ground black pepper
2TBS of cinnamon
1 teaspoon of cayenne pepper

Feel free to use it as is or modify to your tastes.

We now have the NEW Low Down DIRT. It is SODIUM FREE. The same exact recipe as the Original except it does not have any Salt. It give you the ability to add your own amount of salt, or just use it as is to add flavor to everything. You will love it.
