Chile Verde Burritos

The weather finally turned here in So Cal a few days ago, and it's starting to feel like fall. We decided to celebrate with a nice belly warming meal. The missus cooked up a batch of homemade chile verde in a clay pot in the oven:

Once the chile verde was finished cooking, we filled flour tortillas with the chile verde, rolled them up into burritos, and added more chile verde on top:

Then, we piled lots of grated colby jack on top:

Then, we put the plate under the broiler so the cheese could melt into molten goodness. After we pulled the plate from the oven, I added sliced green onions and cilantro on top:

Afterwards, a friend came over and brought dessert:

That looks "Moosetastic".

I'll be there pretty soon, and I'll bring some Guacamole, Sour Cream,
and some diced tomatoes......darn....now I can't find my car key.
 
I am a BIG Chile Verde Fan. Would love a comparison recipe if you can!
