Pecan Crusted Tuna

Here is a Pecan Crusted Tuna Steak I threw in my Primo tonight. The side dish is a Fire Roasted Tomato and Poblano Rice.

I hope it tasted as good as it looks. How did you do the crust?

I only made two steaks. I took a cup and a half of pecans and pulsed them in a food processor to a about 1/8" pieces. I spread the pecans on a baking sheet and roasted them in a 350 degree grill indirect for about 8-10 minutes, stirring once. Once they are toasted, mix in about 1TB dried Parsley and 1Tsp dried Thyme. I did not dry off the Tuna Steaks, put Kosher Salt and Black Pepper, then dredged them in the Pecan/Herb mix.

and now, how did you do the rice?:-D

Good question!! I threw it together

2 TB Canola Oil
1 Poblano Pepper - Roasted and skin pulled
1/4 cup Chopped Onion

Put the Oil, Onion and Poblano in a medium sauce pan and sweat the onion until tender. When it was done, I just put the onion and peppers in a bowl so I didn't dirty another pan.

1/4 Cup Canola Oil
1 Cup Brown Rice
2 1/2 Cups Water (use whatever amount your rice calls for)
1/4 cup Fire Roasted Tomatoes
1/2 cup Corn
2 tsp Original Mrs Dash
1 1/2 tsp Kosher salt
1/2 tsp Black Pepper
1 tsp Tumeric

Put oil in medium sauce pan on medium/high, put in rice and stir regularly to brown the rice. Reduce to medium, add the water and remaining ingredients including the onions and peppers. Bring it to a boil, then simmer for 45 minutes(or whatever the rice instructions say)

I must say, it came out pretty good for throwing it together.:-D
