Default Chicken & potatoes

Hi all,
spatchocked the 2lb chicken, extra virgin olive oil on the skin, under the skin and on the other side, then rubbed with fresh rosemary finely chopped (a lot), salt, pepper, granulated garlic and smoked paprika.

In the smoker at 400 degrees for 1 hour, 170 degrees:



I guessed that it could take more, so I finished early. Rested foiled for 30 mins, then we were ready to go:



Side dish: smoked potatoes, 7 mins in the microwave then e.v. olive oil, salt, rosemary and about 1 hour in the smoker:

That is a great combination, I love chicken and potatoes.

One of my favorite things to do is to put the split chicken on top of potatoes and onions, then into the smoker. Chicken dripping on potatoes.

That looks amazing! I also love this particular combo, and agree that the chicken drippings with the potatoes are very tasty. Great cook!

Very nice, Roasted Potatoes with Olive oil and rosemary are my favorite.
