Default Porchetta Recipe

I just got finished watching a DDD episode and they were at Dinic's in Philly for the famous Roast Pork sandwich. It got me thinking... How good would some smoked Porchetta be and that someone on here must have a great recipe. So there you have it, I am just a guy looking for a delicious Porchetta recipe!

I did a Porchetta for a Throwdown, and won it.

I went with a very old-school recipe, and it was very good. All of the herbs and spices were stuffed down a small hole made with the handle of a wooden spoon. It was very simple. Very tasty. Meat and herbs.

Our family has always eaten Porchetta as a sandwich. Just cooked pork butt with herbs and spices, not the traditional rolled pork belly. It is dang good though and very simple.

Coat the butt with a heavy dose of the following:

Salt and Pepper
Fennel Seed
Garlic
Oregano
Rosemary
Basil

I like to cook the butt in a foil pan to catch the juices, I don't find bark to be essential when I make this so foil is fine. When the bone pulls out clean mix it all up and throw it on a bun.
