I'm doing one now trying to get the temp up to 350 now it's stuck at 280 now, I'm going to wrap it and put it in a cooler for a hour on this brisket.

Edit UDS is at 300* brisket is at 70*

I have trouble resting past 30-45 minutes. Just like Al said, too damn hungry to wait. :doh:
 
I try to target my cook so that I have at least two hours to rest it. If I end up with a little more or less, it still usually tastes pretty darned good :)
 
I like to wrap in a foil, towel and cooler for at least an hour. I plan for a two hour rest as well, it just seems like it works out well for me.
 
I aim for two hours, but that rarely happens. It's really a matter of when the brisket's done and when it's time to eat (or turn the box in).
 
Rested one about 3 1/2 minutes tonight: just long enough for folks to smell it and come in the kitchen!
