Default Smoked redfish or trout?

I have the great pleasure of being close to the Gulf of Mexico and try to get down to Louisiana at least once a month to do some inshore fishing catching redfish and speckled trout. So I have a freezer pretty much stocked with fish. I love either fried or sauteed, but I'm wondering about smoking some of it, especially the redfish since it's a thicker cut and most of it is still on the half shell. Any of you ever tried this or have any ideas?

Used to be a mechanic at work who used to smoke everything. I used to go out with him fishing in the Gulf here in SW Florida. and I used to let him keep my catch. He would bring it in a couple of days later, all smoked on the Half shell, Red-fish, amber-jack, all scale type fish, was the best fish I ever tasted. He left 2 years ago for Greener pasture so I can't ask what he did with them.

Redfish.... no. better for frying. Ihave smoked Sheepshead though.. not bad.
