These are the first butts I've done on my UDS. I gotta say...with every smoke, I'm loving this drum more and more.
I didn't get any shots of the setup. They were rubbed with a generic rub of paprika, garlic and onion powder, salt, pepper, chili powder, cumin, cayenne, red pepper flakes, old bay and brown sugar. Then injected with apple juice and into the fridge overnight.
Here's about 3hrs in...
Here they are at 165* getting ready for foil...
I pulled 'em off at 200* and let rest for about an hour...
A nice mound of happiness, but it killed my back standing at the counter for so long...
All bagged up and ready for the freezer. I kept the largest one out for dinner tonite and probably tomorrow...
It turned out much better than I had hoped. And took a lot less time than I thought it would. Total time was about 7hrs. Smoked at 240* with mesquite.
