Boshizzle Inspired Corn Cakes........
I had some cornbread mix in the pantry. It was a lazy Sunday afternoon. I had the game on, tunes going, SJ smoking.........just had to try em. Kids went nuts for em!

They look great! Did you cut the handle off of a cast-iron pan? I have a cast-iron pan that looks like that love the idea.

Thanks for posting that! I was wanting to make those after Boshizzle's post and proceeded to plum forget. I've been making bacon (also inspired by Boshizzle), so maybe I'll have next week's batch of bacon with some corncakes!

Those look good. Did you just take a box of cornbread mix and add a can of corn? The mix looks runny. I want to try them...any advice?

Thanks everyone! I just used some instant cornbread mix. I used two packages and just doubled the recipe, but for some reason it did come out a bit runny. However, for making cakes it worked out just fine. I drained the corn and added it to the mix. Next time, I'll leave the corn out and just make em like regular pancake and put some butter and honey on em. I like the idea of blueberries too. I had also thought about putting some diced jalapeno in em, but didn't get around to it.
These things are just so good. The DO lid is a great tool to have. I've even used it as a pizza stone. It works great.
