We are planning an even in NJ for next year and we are coming up with prices for BBQ vendors, we will allow one large bbq vendor with exclusive rights to the festival. On average festivals here get around 5000 people over a two day festival about nine hours a day. What kind of fee would someone suggest you get from them for their spot. thanks

I might suggest that you charge a % of their take for the 2 days.
I know a perfect guy for that job. Fire Dept Lt. Gregg Poeppel.

Dave's right, I know Gregg as well, (he delivered my pit). He'll help you with what you need.
 
The ones I do are a flat rate per spot many of them have gone back to this it's much less work keeping track of everything. I would say $600 or so which is what I have paid for some that size in NY.
