Default Brisket Burger for the Throwdown

I found Brisket on sale at $1.39/lb for the Fourth of July holiday. I bought 2 because that was the limit. A 15 pounder and a 17 pounder. I would have gone back for more if I had more available freezer space.

Since the Special July Burger Blowout Throwdown was in progress, and I finally had a little time off from work, I decided to grind one up for burgers. I threw in about a 1/2 pound of pork belly that I found while rearranging the freezer to fit in the other brisket.


After grinding and mixing, I made 28 8 ounce patties and 2 10 ounce.

Actually I should have used a higher pork belly to brisket ratio.
They were Damn good burgers mind you, but I couldn't taste the pork belly.
