Voted have own timing. Depends on day, beer drank, and amount of fat in ribs.

I use a 3-1-eat method for my BB's and they are perfect everytime on the BWS. I do not care for spares myself but when I do them for others I use the 3-2-1.

I foiled on the SNP but with the UDS I don't have to, seem the spares stay moist and tender when pulled. Love the flavor from the UDS!!

I like tender ribs.
So do most of the BBQ judges and my friends and family.
Therefore, I foil as needed because I want them all to be HAPPY

I use a 3 - 1 - 1 , kinda, sorta. Depending on all that Norco said & how screwey the temps went.

If I foil, I foil for an hour on BB's, 1.5 hrs on spares, then back on naked with sauce until done. I've never held them in cooler.... almost always eat as they come off, after a short rest.

While I voted no to foil, I have started to "tent" my ribs when they have gotten to the color I like. Otherwise they go without.

As to the ribs, I foil. But I'm not competing - I'm serving people who want the bone to pull out and spread all over their face.

Does that sound right?

It's amazing how close the three catagories are in the poll.

I don't use foil on the BGEs but often do on the Lang. I think it's a pain.
