Ideas please..

After reading through the 5 million page thread on UDS's I have built one. I want to thank everybody for all the great ideas. Now Im going to have my first cook on it this weekend I was thinking of a fatty or some kind of chicken bacon jalenpeno wrap type thing.... and also something bigger like a brisket or a butt. By the way this will be my first smoke ever. But when I seasoned my UDS I can control temp pretty good. Im just looking for some ideas. And thanks again for all the help!
 
Do a butt, (really easy and very forgiving), a chuck roast, a fatty or two, (one stuffed one right out of the paper), and some Moinks or ABTs. You won't regret it.
 
Pork butt and all the stuff you mentioned above .... maybe a spatchcocked bird as well. Hard to beat a butt or bird for the first smoke. My $.02. :biggrin: Happy smoking!
 
Go big.......do a brisket. Not that hard to do, just needs a bit more time. You could do one of each! Break that drum in BIG!!
 
+1 for pork butt - so very forgiving, all you need for success is a temperature probe for the roast. Getting better is for future smokes (as "better" is always in the future!).

I need to know how to build an ABT, I guess I don't really need to know what it means.
and i don't really need need a probe in one do I? I think ill cook a butt too.
 
No need for a probe! An ABT is an atomic buffalo turd. Basically a jalapeno (doesn't have to be though, use a poblano, habanero etc if you wish) stuffed with cheese (usually cream cheese), and wrapped in bacon. You can add other things to the cheese filling to suit your taste. When the bacon is done, it is done.
 
Ok next question, I think it will be some ABTs a fatty and a butt, now how many pounds of briquettes should I use and how much wood, I only have some chunks of hickory. By the way the basket is about 16" in dia. also should I keep it about 220-230 for the whole time if i can?
 
Fill the basket up, or 10 - 15 pounds. You can shut down the drum to snuff out the fire when the cook is done. You'd rather have too much than too little. Use 2 or 3 fist sized pieces of dry seasoned wood. Do not soak in water. How long is the probe on your pit thermometer? If short, keep temps around 210* If the probe goes to the center of the drum, 230* - 250* should work out just fine.
 
A chicken thigh, pounded somewhat flat, wrapped around a slice of jalenpeno then wrap the whole thing in bacon...
 
Ok where should i put the wood chunks all on top, in the middle, or both? I think I only need 4 or 5 they are about the size of a fist I guess. Also what is the best way to start it, to keep up to temp and keep it that way. Thanks for all the tips so far!
 
A butt is more forgiving becuase of the amount of the high fat content that will render during the cook (keeping the meat moist). You will need to cook it between 8-10 hours and I would suggest getting it up to 190 insided temp if you really want it to be easy to pull.

A brisket does indeed take longer and unless you are mopping it, can also be a little dry, so save that until you have mastered your UDS and feel a little more comfortable with controlling the temps when opening the lid several times during the cook.

I read almost all of that thread, there were just alot of different opinions... lol. Ill have some pics up today.
