Sorry I only have one pick for how the cook turned out - an inside shot of the brisket below. Everything turned out very good. I had to pull things a little earlier than I wanted because we had guests over but everything got rave reviews. The ribs were the best I've done - the brisket could have used another hour, I think. Dang thing stalled out for like four hours before getting closer to the temp/probed doneness I was shooting for.

All I can say is that I could not be happier with this Shirley pit. My BIL, who knows a thing or two about fabricating, was going on and on about how good of a job Paul and Tyler had done in terms of smoothing out the corners of my square stacks, painting in welds, etc. "This guy knows what he is doing!" High praise from a BIL that doesn't offer it up too often!

And thanks to all contributors on this site. That I was able to get my first stickburner and pull off being able to build & maintain a consistent fire on my first go-round (for a family party no less) was an absolute miracle so thanks for all the tips and suggestions that folks are always contributing on here.

That's a damn nice cooker. Not really familiar with offsets but that cabinet style looks great.

Nice cooker. I am not sure about that one but I built one out of a tank with barn doors and my door temp is 10-15* lower then vs center of grate temp is 15* higher.

What weight of whole hog will this cabinet style hold? Seems like a whole hog will fit better here than the traditional style tube pit.

Before we got too far away from Memorial Day just wanted to post a couple more pics of my Shirley pit. As many have noted the build quality is excellent so I just wanted to highlight a few close-ups of the pit so you can see what this actually means.

In the first pic, I asked for square stacks, curved. You can see here how those turned out. No sharp corners and very smooth. I have no idea how someone does that. The rest of the pics just show more of this with smoothed corners, tight intake, etc. Enjoy and thanks again to the boys at Shirley for building this for me.
