Angus Flat Iron

Flat Iron steaks are very versatile.

I cut them into portion-size pieces and grill them like filet mignon steaks. I grill them whole and slice them like London Broil. I slice and grill them for steak tacos.

Grill hot and fast. Go for medium rare doneness -- no more than medium. They are tender, like tenderloin, but have more beef flavor than tenderloin, IMO.

Flat Iron steaks are one of my favorites.

Not sure exactly what part it came from but it was good. It did have more flavor than a tenderloin but not anywhere near some others. They were surprisingly tender.
 
Flat Iron steaks are some of the tastiest steaks on cattle, it comes from the shoulder.
 
I marinate the piece whole, grill it like a flank steak and cut for fajitas or steak sandwiches. One of my favorite cuts.
