Hey gang,

Got the smoker fired up this morning and popped in a 9lb butt.

The new Lang is chugging along at 300-ish and after an hour it's already starting to look yummy in there.

I'll keep it crankin till it hits 160-ish internal then pan/foil it for another 2-ish hours, rest for 2 more etc...

How many butts could you fit in that there Lang? Briskets? Racks of Spare Ribs?

Would be interest to know how much meat will fit on that. I have been looking at that one online and trying to decide. I have heard they cook very well

Ben told me it'll hold something like 75lbs of meat. So I'm thinking like 8-10 8-ish pound butts.

I live close enough that I could take a day trip and just browse. Might end up buying more than one. LOL

After roughly 4hrs when it hit 160 internal and I liked the color on the bark I popped it in a pan with some apple juice and ginger beer.

Deboned this turkey tit and popped it in the cooker a few min ago as well.

Hey now! i'm really a Cowboys fan :tsk: ....just rooting for the other Texas team plus I'm still holding a grudge over "the catch"! Damn Dwight Clark :mmph:
 
LOL, figured if you were rooting for Houston that you'd not be a Dallas fan.

The comforting thing about Tony Romo is that no matter how big the situation he always finds a way to elevate his game to a point just shy of what is needed to overcome it.

So....back to the cook.

Rested the butt in a cooler for about 1.75 hrs and then pulled it. I was stoked that the bark didn't suffer due to the time in the foiled pan or wrapped to rest. It still had nice texture. Added a bit more salt to my usual rub and got a bit more smoke ring than in my previous cook. The extra salt didn't overpower the other seasoning. Hard to I think with that much meat. So here it is pulled:

And here it is served on an onion brioche roll with a bit of sauce, slaw & dill pickle. My wife made a great cole-slaw and sour cream potato salad. I don't recall who brought the beans but they were really good.

Nice looking smoker and pork butt!! There's nothing like "cookin on a lang"!!!

It's going to be tuff watching the 49ers playing in another stadium... love me some candlestick park!!
