Grilled BBQ Bologna
This weekend is my annual float trip for fathers day with my 3 daughters and company down the Tahlequah river. Got a chub of medium sized South Carolina Bologna. Cut off the red wrapper. Poked all over with a fork and cut slits to allow a little smoke in. Rubbed lightly with olive oil and seasoned with Killer Hogs BBQ Rub. Smoked for a couple hours or so till it hit near 160 IT. Wrapped in foil and resting. Plan to cut in 1/2" thick slices and bag. Will fry in a cast iron skillet with onions and olive oil. Serve on slider buns with BBQ sauce.
