I cooked my (traditional) Chinese dinner for Christmas Eve, so at the same time I had to prepare something for Christmas day lunch.
Can't smoke when I'm at home, so had to "cheat" and use an oven instead...
Started with just over 1 KG of chuck, salt/pepper, then into the oven till 165 IT
Back in the oven, covered with foil till 200 IT. Had to cube it at that point, then back uncovered for another 30-40 minutes.
Above pic when ready that evening.
For lunch heated it up in the oven covered for about 1 hour. sorry, no pictures at that point. It was very good and quite spicy. For others (I had it with a cousin, the rest of the family went with their Turkey) I may reduce the jalapenos a bit....
For NYD lunch I'll be cooking lunch for 30 people, I'll be doing some roast (this time I'll use the BBQ)... I wish I could do prime rib, but that's too expensive for our family & friends who won't recognize good meat. I'll probably get some "Lucerto" (Round) instead...
