Slicing Butt

I'd look it up but my wife is hollering at me to go... anniversary dinner out, ya know. Anyway, I've only pulled my butts previously but I want to slice one of the two I'm putting on tonight. What temp do you need to get it to for slicing? I go 165* wrap 190* cooler for pulling. Is slicing temp higher or lower? I THOUGHT I read higher once. Thanks!
 
Anywhere from 165* to 185*.I like to slice around 180*.

You don't have to cooler it.Just let it rest before slicing.15 to 30 mins.

Continues the process of breaking down the sinews in the meat. Wrapped in HD foil, it locks in the juices, makes for "butter" meat

Be careful opening the foil, very wet. Save the juice and pour over the pulled butt.

I agree with Willy, don't wrap and slice like a roast, rather than wrappiing and ending up with budda
