Great question! I work in Foodservice with many of the national Burger Chains and this is a real discussion! I'm in the camp that leans towards veg underneath with the weight of the patty and cheese holding everything under in place.

Pro-tip #2 - Mayonnaise is not just for flavor and mouthfeel, it also forms a moisture barrier, so if you put a juicy patty on top of a toasted bun coated with Mayo the juices will not penetrate your bun making it soggy! Mayo is mostly fat which will not let juices migrate into your bun.

Also - Great looking burger and fries!

A thing of beauty, Tom - loving it!
Yer fries - raw cut taters straight in, or is there any blanching, pre-cooking or whatnot going on?

Great looking grub. Especially like the twice fried fries. I prefer my fries to have a little crunch to them.

Thanks,

Robert
