vending turkey legs for festival

Brothers, I need some advice for vending an event where I will be smoking turkey legs on a stumps platinum 4 smoker. The amount that I will be cooking is 1100 over a 2 day period What is a good temp to cook at and what about getting the legs tender and juicy for the hungry eaters. The start time for the festival is from 9:00am to 10:00pm How long will they take to cook? What about seasoning and prepping?
 
I think most vendors get them pre-cooked from Sams and then thow em on the smoker.
