I was stoked to get invited to hang out with Joe Abad and his family as they prepared four 125 lb. pigs for a charity event at the Willows Run Golf Course in Redmond, WA sponsored by the Tulalip Casino.

When I arrived the Imu had been dug, Alder splits had been burnt down and the volcanic rocks heated and and the pigs prepped and ready for the pit.

They filled the cavities with hot rocks.

Wrapped in chicken wire.

Normally Joe uses banana leaves, but his supplier dropped the ball, so they used cabbage instead. Its just insulation, I was told.

Covered with wet burlap bags, a poly tarp and then backfilled. This is where the magic happens.

I had to cruise into Seattle for a meeting, and got stuck on the Fremont drawbridge crossing the Ship Canal.

3 hours later, I made it back to see the other 2 pigs slowly turning on Joes homemade spits.

The pigs were seasoned with Sea Salt and some Lemongrass and that was it.

Joe's got an assortment of smokers at home, WSM's, a backyard Gator Pit and kettles, and I'm hoping to get him to come out and cook some comps in the future. I thought I'd have to go to Hawaii to taste Huli Huli and Kalua Pig, but here it was in my own neighborhood!

Ahhh, Kalua Pig, some of the best I have ever had was at a friends house in Kahalui, Maui...I miss Maui...Need to return...

Outstanding. I lived in Hawaii for a bunch of years and we would do this a couple of times a year. Used to stick whole chickens in the stomach to cook as well. That right there is good eating!!
 
Looks like they knew what they were doing for sure!
