Default butcher shops in KC

Any recommendations on good butchers in the Kansas City area? I mostly shop at HyVee and occasionally visit Curt's. I am looking for pork belly and maybe some other stuff like bone marrow ;) which I cannot get at Hyvee and Curt's left me with the impression that it would be difficult.

Not sure if McGonigils sells that or not. They are pricy. Hopefully a local from kc can chime in.

Don't ask for "marrow" ask for beef shanks and femur bones. Once you get them ask the butcher to cut them up on the saw.

Yellow pages says this is the closest Meat market to you. Give them a call and see what they say.

Bichelmeyer's in KCK has those and more. Chat with the owners there to find out what all they can do for you. You will be very pleased with the quality and service, I guarantee you that! You can get whole animals, they will custom butcher for you, and they have every part from the animals available (great place to get pig ears for your dogs). I order my chubs of bologna from them uncooked (have to call ahead because they normally cook all their bologna that they make on site) and smoke them myself in my smoker. Best damn bologna ever! You can also get Wagyu there...just tell them what cut you're looking for (brisket included of course).

I agree that Bichelmeyer's would be your best shot. Great selection of meats and they are very customer friendly.
