Along with cheesecake (not my favorite), I've also seen a bunch of fruit cobblers, especially apple, creme brûlée, chocolate cakes and puddings, and things with strawberries.
Numerous other things as well, but these seem to be the most common that I've judged.

We have a team local to here that has been killing it with cheesecake

Probably pretty dang well. Our next competition they don't have dessert, but they do have any "Anything Goes" where they supply bacon and sausage. You only have to use 1 of the ingredients so we are working on a bacon dessert. Though it could completely backfire and disrupt the time/space continuum :crazy:.

I once judged a dessert that had bacon in it. The dessert was not that bad but the bacon over powered it. It mainly tasted bacon so I scored it down. When I am judging desserts I think that it should taste like a dessert and not simply taste like bacon.

It crashed and burned on one 8 in texture -- while multiple people commented favorably on the contrast in texture provided by the crunchy crust, one judge must have not liked it.
