Default Perfect Perfect 180 in KCBS Brisket

We have done 1 accomplish I set out for the year and that is to get a perfect score in Brisket. What happened is all 6 judges gave us 9's on judging At a contest this weekend. Happy to say "Trust Your Butcher".

Now onto the chicken testing ( lets see brine, rub-brine combo, nope an injection) thats seems to work. Off to the Butcher block lab.
