a lot of prople on here will say use apple or cherry. Which is good on beef but me personaly I would go with a hickory apple mix. The apple willl give a sweet taste and the hickory will add some depth to the meat.

Oak if you want a smoke flavor, hickory or pecan if you want a nutty flavor.

I agree with Bryan. I like a light oak smoke on a rib roast.

The best one I've ever had was done with mesquite, and no, it wasn't bitter at all.

I use the heavier smoke, as the beef really does not want to asborb fruit woods..a nice marbled roast will handle it and cook it hot...real hot

I've always been very happy with oak. Beef really seems to like it. I also like mesquite a lot, but that is precious here.
