Pardon the ignorance but what is a Santa Maria grill? What is its claim to fame?

Nice art work there.
Santa Maria style grills are basically grills designed for direct grilling, with an adjustable grate system, usually a set of cables that use an overhead crank system to raise and lower the grates over a coal bed. Typically, Santa Maria grilling is done over a bed of coals derived from burning down red oak splits.
