Ribs, fatties, and the introduction of "Cajun Balls"
Hey all,
Had the day off today, and chose to spend it with the smoker providing my family some yummy treats. On the menu: - Ribs - Scotch eggs - Cajun Balls - Fatties (nekkid) - Stuffed Bell Peppers, rice, sausage, onion, mushroom, butter I'd also like to introduce you to a tasty treat I'd like to call "Cajun Balls". Now, I'm not a Cajun, so please excuse me if I'm stepping on the toes of our Cajun members here. I certainly hope that I've made you proud and "represented" you properly. That being said, here's the photos.... The start of the cook. And a beer. So while the ribs are cooking, I start the Cajun Balls. The ingredients are very simple: - Bulk sausage (in this case, "Tennessee Pride Mild") - Andouille sausage (from the butcher) - Bacon (the most wicked bacon I've ever seen) - Cilantro - Onion - Cayenne pepper (Zatarain's) - Kosher salt - Black Pepper (fresh ground) Here's my Cajun balls..... ;) My balls cut in half. Stuffed peppers with mushrooms filled with butter (pre melt) After melt As most of my "cooks" go, I don't half "after" pics, cause by then, the natives are restless and won't tolerate me taking photos. hope you enjoy, and hope you make some Cajun Balls of your own, and share the modifications you make!!!! Also...sorry for the fuzzy pictures. That's a personal pet-peeve of mine, yet I seem to do it on most of my "smokes".
