First Smoker Build
New to the Forum. Just finished my first UDS build. 4 air vents (2 with Pipe nipples and 2 with ball valves) 17" charcoal basket made from weber 17" grate and expanded metal. Has side temp gauges but as everyone knows, they are much different temps (2" stems) than actual center of the grate temp. I use 2 iGrill bluetooth probes and their app for temp and meat internal temp.
Planning to do some shoulders and Pig Candy this weekend. Comments welcomed |

Haven't done fatties yet. On my list. This is my first adventure into charcoal and wood smoking. I have a Masterbuilt electric smoker I have been using for 2 years. Easy as can be but the smoke flavor is hard to duplicate with electricity

Is that a 22" weber grate you are using to hold food?
That looks like it will definitely breath, which I've found to be an occasional issue with UDS. |

Yes it's a weber 22" grate. Contemplating adding a diffuser to even out the heat across the grate.

impressive work! I am also new here. I have a PBC and love it but have been feeling the urge to build a UDS .... I am sure my wife will be annoyed about it. But in all seriousness there is no stopping me at this point. Its all I think about. Is there a reason no one hangs meat on a UDS? seems like the PBC idea is so simple to replicate.
