Default Another Round of Sausage: Bratwurst & Curry Cilantro Sausage (tons of pics)

So another sausage making venture happened Saturday. Pretty similar to others I've done, but who can ever get enough sausage.......making. My wife helped last time and told me on Saturday "Hey let me know when you are going to make it so I can help". Love that girl .

This time around I found a few bratwurst recipes and combined what I liked and also went a little rogue with my own blend for a curry cilantro sausage. This is around the 9th or 10th type of sausage I've made and still haven't made the same type twice. So really not sure which is my favorite kind. Here's the tons of pics I took .

Soaking the casings


Rinsing them out


About 25lbs total with roughly a 60/40 pork/beef blend


Wife got a shot of me chopping cilantro


Here's all the meat in a bowl


Spices lined up


Spices ready


Starting the grinding of the bratwurst


Almost done with the brat grinding


Sampling the ground meat. Always helps. I added more spice to both batches



Ready for stuffing

Curry cilantro seasoned and ready for grinding

Grilled some last night a a friends


Firing up the Shirley for smoking

All the sausage on


Getting close to done. I've been running low around 150 for about 2hrs to get more smoke into them and then up the temp to finish


Into some cold water to quick chill


Firing up the egg to grill


Grilling some potato wedges


Off to the side with some butter to finish cooking


All bagged up for the freezer


Potatoes in the butter. First time I've done them on the egg this way and they were awesome


After all the sausage sampling I only put a few on the grill


And eating
