Default Saved Dried Out Sausage?

I took my first stab at making some smoked sausage a while back. I ground up frozed meat, mixed with seasonings, stuffed casings, smoked, and froze it. Flavor is decent enough (cut out red pepper flake which was a mistake), but I over-cooked it slightly while smoking and the one time I made it for dinner it got dried out when heating on a grill. What are some ideas to save this sausage? It is an Italian-style seasoning. Any soups or sauce dishes that it would be good in?

Maybe do a variation of Italian meatball soup? Instead of meatballs you could slice the sausage and add it during the last few minutes.

Add it to baked beans, pinto beans, or to a Spanish style rice, or dirty rice mix. Great added flavor and texture.
