Diane's Baked Beans (she's pissed at me for given this out)
3 cans 16 oz each pork & beans 1 8 oz can of crushed pineapple 1 1/4 cups packed brown sugar 1 med onion chopped 1 small sweet green pepper chopped 2 slices bacon Place beans in large baking dish add pineapple,brown sugar, onion and green pepper, mix well place Bacon on top of beans bake @ 325 for about 1 hour. PS mix and refrigerate overnight then bake if you have time

1 lb ground beef
1/2 lb pork sausage 8 slices of bacon 4 lbs of pork n beans 6 oz honey 12 oz bbq sauce of choice 1 1/2 cup chopped onions 1 tsp crushed red pepper 1 Tbsp Worchestershire sauce 1/2 tsp salt 1 tsp dried mint 1 tsp tabasco cooke the bacon and set aside. cook the beef and sausage and drain. crumble the bacon. mix everything together and put on the smoker for about 90 minutes or until the onions soften a little. this is more like a meal than a side dish.

Keri's Hog-Apple Baked Beans
3 or 4 slices bacon, diced 2 (16 oz) cans pork and beans, mostly drained (modified to 2 28-oz cans Bush's Baked Beans - see note below) 1/2 c. Blues Hog BBQ Sauce (or other sweet-spicy favorite) 1 lb. smoked leftover smoked pork or beef, more or less, or 1 lb crumbled cooked pork sausage 1 can apple pie filling (chop up the big chunks some) 1 medium onion, chopped 1/2 green pepper, chopped 1/2 c. brown sugar 2 Tbsp. Worcestershire sauce 2 Tbsp. Mustard (prepared) 1 tsp chipotle or cayenne powder (optional, to taste*) 1 tsp Blues Hog barbecue rub (or your favorite de jour) Brown bacon, and saute onion and green pepper in bacon grease. Mix in remaining ingredients. Bake at 325º for 1 hour, or simmer on stovetop in large pot for 30 minutes if you don't have time to do them in the oven. Serves 12. This recipe began life as APPLE PIE BAKED BEANS from somewhere on the web, but I think I've made enough changes to it now to claim it as my own. This is my standard for baked beans anymore. *This is a rather spicy recipe due to the chipotle/cayenne powder. Feel free to leave it out if you'll be feeding those who prefer a less spicy taste. Keri C, smokin' on Tulsa Time _____ Lately, I've been using two of the 28-oz cans of Bush's Original Baked Beans - I think I'm going to try it with the new Honey variety next. Beans are kinda like fatties, ABT's, Stuffed loins, etc.
You can really let loose and create your own version--no real rules or secrets. Almost anything works! I tried Keri's with the apple, and I tried Myron's with peach. Loved them both. Myron Mixon's (Jack's Old South) recipe is here: http://www.foodnetwork.com/food/reci..._27741,00.html This is some "stuff" from last week. Bacon, pulled pork, chopped brisket, onion, green/red/yellow/orange bell peppers, chopped jalapeño, and ????? Rendered it all down, added #10 can of Bush's Original beans, a 303 can of peaches cubed up, and a jar of peach marmalade I had laying around, some BBQ sauce, and some spices to include Emeril's Essence. Put in smoker under pork for about 3 hours at 250 Deg. GONE, GONE in a flash! Everyone who eats my "beans" says they are a "meal"--not just a side dish Just blend all the good recipes to make them your own and COOK ON! TIM

I used to used canned beans as a base and build from there, however i got to thinking (can be dangerous) that if i am going to cook a piece of meet for 12 hours why not spend that much time cooking a really good pot of beans. I start with dried white beans. I soak them for a few hours and just make the sauce up a little runny. As it cooks in the smoker the beans keep soaking up the flavor. I also found putting the pot under the butts in the smoker helped as all the rendered fat(and flavor) that dripped from the beans. Combine that with the real smoke, and those were the best beans. The only thing i'll change next time is start with 3 pounds of dried beans instead of one.
