They drag them critters up in the off season after scallop season. Divers also make a years wage diving in Jan. and Feb. in dry suits.

The whole harvest with sea cucumbers goes across the pond.

So have you eaten sea urchin roe yet?
It is a powerful experience so it divides people quickly into a "love it" and "hate it" divide.
I took my first mouthful at a sushi place in Japan and almost fainted with pleasure.

Our great whites are really harvesting swimmers this year over our way so I suspect the seafood situation might decline..

I live in Mola, 10km (about 6 miles) from Rutigliano.
They were about 30 sea urchins.
