Default keeping food warm

any one ever just drop there cooker down in temp to keep the food warm before serving? if so what temp do you drop it to?

if it's an electric smoker, I would just turn the power off on the smoker and let it stay warm ( cooling down and as soon as it;'s cooled down it's eating time )
