Default Pecan Smoked Pecan Rubbed Potato Smied Catfish

I received a sample of some pecan rub from a friend and decided to give it a go on some catfish filets.



Used my drum with a bit of pecan...



made some apple dumplin's...



I threw in a spam and some veggies...



After an hour of smoke I rolled the smoked fish filets in shredded potatoes....



and fried til crisp....








The crispy fried potato coating was tasty, but messy to make.




The smied (smoked/fried) pecan rubbed catfish.






I loved the pecan rub!

I like that dish, the potato crusting is a nice touch, hard to get right. Nice job Jeannie. I hope that secret rub you and Larry are using is coming to market soon, I got a good feeling about that.
