As stated in my previous thread, the brisket was still hanging when I arrived to the butcher.
Dont know why I went with the grain instead of across. It was literally falling apart with the grain. I lost my brain, well brain cells were a little "hydrated" at that point if you know what I mean. Put it on the smoker at 1030am, pulled it at 9pm and let it rest for an agonizing 2 hours.
Just got done working out, thinking egg white omelette, with brisket and butt, rolled in burrito for breakfast
