what i have read from the forums is that it needs to come off, can give a bitter taste. then i looked at a couple bags at Cabelas and its all stripped off the apple, pecan, hickory etc.

Some do, some don't.
I personally don't worry about the bark unless its REALLY thick, then I try to knock it off. I've tried it both with and without and never noticed any difference either way. As long as it's seasoned properly, try it both ways and see which way you prefer it.

Ive done it both ways, what out for critters(worms,etc) that get up under the bark.

My rule of thumb has been: if it's crappy looking, like it has some nasties on it, I'll grab the hatchet and take it off. If its clean and dried, I leave it on.
