Money muscle practice on the Daniel Boone
I had a couple of boneless pork butts from Costco in my freezer for a while, so I thawed them out and tried out a new way of cooking them to protect the money muscle. I stole it from Harry Soo. It worked well. I got the bacon, tubes and crushed the money muscle. It was one of the best pork butts I have made in a while. The smoke ring is really nice for a pellet smoker.

I'm a fan of that style as well for comp style cooks. I need more practice figuring out where the tubes are etc when I trim though. I can trim the hell out of a brisket but I find pork more difficult. Nicely done

I really like cooking them this way. You get more surface area to put rub on and they seem to cook faster

That's the method where you butterfly the butt and wind up with the money muscle group on top so it's shielded from the heat? I've tried that a couple of times it's pretty slick and cooks evenly.
When you said "bacon" are you talking about the muscle in-between layers of fat that is covering the tubes? When I'm breaking down several butts I always reserve that for cooks snacks.... it's one of the tastiest and moist pieces on the butt. Never knew what it's real name was.
